Greetings, Fangirls! I was delighted to conjure up this meal earlier this week, upon realizing that we’ve never talked about Cars for anything on this site! It’s about damned time. And what better way to celebrate that with some tasty food honoring the speedy Lightning McQueen.

This was much quicker than I had expected it to be, which I guess only makes sense for a meal based off of a champion race car. It was also intensely delicious. This recipe might as well come from Radiator Springs itself. To make this tasty bruschetta, you’ll need:

2 tbsp olive oil
1 clove garlic, minced
2-3 tomatoes
1 baguette
1/2 teaspoon oregano
1 teaspoon basil
1/4 teaspoon orange zest
1 tablespoon orange juice (from a real orange, not the carton)
1/3 cup balsamic vinegar

Preheat the oven to 350 degrees. Cut your baguette, and place them on a cookie sheet, then coat them each with a little olive oil, and salt & pepper.

Place them in the oven until they start to lightly toast.

In the meantime, chop your tomatoes. To a medium sized saucepan, add your olive oil and garlic. Cook for about 1 minute or so on medium heat. Then, add your tomatoes. While everything cooks down a bit, add your seasonings.

lm3

This is where the bruschetta gets a sassy & zesty kick to really embody Lightning McQueen; the orange.

lm4

Add the zest and juice, and let the mixture continue to cook for a few minutes more. Once it appears to be reduced down more, it’s ready. Place it on top of your bread, and set aside. Now it’s time to fuel up. This is motor oil bruschetta, isn’t it?

To make your motor oil, place your balsamic vinegar in a small pot. Put it on medium high heat until it starts to simmer, keep it at this simmering until it’s the thickness that you desire. This is known as “reducing” the balsamic, and will make it a thicker, and slightly more sweet tasting.

lm6

Then, fuel up your bruschetta by drizzling the reduced balsamic on top.

lm7

That’s all there is, Fangirls! Speedy just like Mr.McQueen, and oh so delicious!

Eat up, Fangirls!
